We proudly export green coffee to our partners in Europe and Canada.
Our coffee is grown and processed completely organic on our farm. We use own compost, recycle our water and use our own organic chicken manure.
For every roasted bag of coffee, we plant one new tree, For each 70kg bag of green beans sold to our international roasters, we plant 100 native trees.
We pay the highest wages in the region to our coffee harvesters which is almost double the average payment. We invite them to be part of our success.
OUR PROCESSING METHODS
HONEY - DOUBLE FERMENTED - WASHED
After many trials and errors, we developed the perfect processing techniques for various coffee flavours:
- Honey processed: "Pulped natural" or "honey process" is a method in which the fresh coffee cherries are de-pulped, but allowed to dry without washing. Most of the cherry is gone, but the remaining golden, sticky mucilage is reminiscent of honey, which is where the process gets it name. Taste: A pleasant middle ground with an extra hint of sweetness. Complex, sweet, heavy-bodied, and with a mellow acidity, honeys are delicious!
- Double fermentation: In the double fermentation processing method, farmers de-pulp the cherries immediately after harvest and place the mucilage coated seeds in fermentation tanks, with minimal water contact, for 12 to 24 hours depending on the rate of fermentation wanted. Taste: The sugars in the coffee bean are left to ferment, this gives the bean a richer and exceptionally clean taste.
- Washed: Unlike the natural processed coffee, the washed process involves the removal of the cherry and mucilage surrounding the seed, and then submerging the seeds in water where a fermentation process removes the remaining flesh. Taste: Clear and vibrant notes. Fruit notes are still found, however, fermented and berry notes are less common.
